In the early years of my parents’ marriage, my dad worked in a spud nuts shop. As a result, we obtained this wonderful recipe for doughnuts made with potatoes. They are awesome! Not the healthiest of choices but delicious nonetheless.
We haven’t made these in our household in quite some time and revisiting the recipe has my mouth watering. It may be time for a little indulgence.
1 cake yeast (dry yeast may be used as a substitute)
1/2 cup warm water
1/2 cup sugar
1 tsp. salt
2/3 cup shortening
2 cups scalded milk
1 cup mashed potatoes
2 beaten eggs
6-7 cups flour
oil (for frying)
Dissolve yeast in warm water.
In large bowl, add salt, sugar, and shortening to milk, cool mixture to body temperature.
Add potatoes, eggs, yeast mixture, and flour to milk mixture.
Roll dough on lightly floured surface to 1/2 inch thick.
Cut with doughnut cutter.
Let rise 1 hour.
Fry in 350 degree oil.
Drain on paper towels.
If you so desire, you can combine 2 cups powdered sugar, 1 teaspoon vanilla and enough warm water to make a thin glaze. Dip doughnuts in glaze.
